At the moment you can only restore auto-saved versions. It would be great that on the list of Backups, you can get the option to restore from previous published versions as often you would want to rollback to the last stable live version.
For the time being, to avoid the challenge of sifting through many auto-backups to find the last stable or published version of a site, you can more frequently create manual backups e.g. before making a significant modification or after you publish a stable release. This will make it much easier to find past versions to restore.

I currently have this exact problem and it doesn’t make sense at all that a published version cannot be retrieved...
