We came across this while trying to dynamically inject schema markup into collection pages. There's really not a good way to do it as of now. A schema tool or, at the very least, a way to inject text fields from the collection into their template page <head> would be a powerful asset from the on-page optimization standpoint. As voice search grows, this will become a more powerful feature (and it's something WordPress can do with Yoast, I believe)
