this seems obvious.
there are variants that I don't sell. they shouldn't be an unselectable option that is visible, which is confusing to the customer.
make them hidden!

Maybe the exclamation point is a bit forceful, but I hear what she's saying. There are combinations of product variants that are not available and thus should be able to be turned off. If I sell blue, green, and yellow t-shirts in sizes S-XL, but green is never available in small, a simple visible button on each variant would allow me to show or hide those variants that are not available vs those that are just out of stock currently.
